On \u00e9cosse les petits pois, on les fait cuire dans un peu d&rsquo;eau fr\u00e9missante et de beurre pendant une vingtaine de minutes. Il convient de go\u00fbter les petits pois pour \u00eatre s\u00fbr qu&rsquo;ils sont cuits.<\/p>\n<p>Verser un peu d&rsquo;huile dans une po\u00eale. Quand elle est tr\u00e8s chaude, poser le saumon c\u00f4t\u00e9 peau. Laisser 5 minutes la peau griller, puis baisser le feu pour que le reste du saumon cuise.
