On peut mettre le pav\u00e9 30 minutes au cong\u00e9lateur pour qu&rsquo;il soit plus facile \u00e0 couper. Verser les ingr\u00e9dients dessus (zeste, gingembre, jus de citron, menthe, sel, poivre, huile d&rsquo;olive), en recouvrant chaque lamelle de thon pour qu&rsquo;il soit assaisonn\u00e9 de fa\u00e7on uniforme.<\/p>\n<p>&nbsp;<\/p>\n<p>Tartare d&rsquo;espadon :<\/p>\n<p>&#8211; 1 pav\u00e9 d&rsquo;espadon<\/p>\n<p>&#8211; 5 cl de vinaigre balsamique<\/p>\n<p>&#8211; 1 tomate coup\u00e9e en d\u00e9s<\/p>\n<p>&#8211; 2 c\u00e0s d&rsquo;huile d&rsquo;olive<\/p>\n<p>&#8211; le jus d&rsquo;un citron jaune<\/p>\n<p>&#8211; sel, poivre<\/p>\n<p>Verser le vinaigre balsamique dans une casserole et faire r\u00e9duire de moiti\u00e9. Go\u00fbter le vinaigre pour constater qu&rsquo;il a perdu son acidit\u00e9. Sinon, laisser encore r\u00e9duire.<\/p>\n<p>M\u00e9langer tous les ingr\u00e9dients.<\/p>\n<p>Il est important de manger le carpaccio avant le tartare.
