Verser 300g de farine dans un saladier. Saler un\u00a0peu.\u00a0Ajouter les\u00a03 \u0153ufs un par un en m\u00e9langeant entre chaque \u0153uf. Ajouter un filet d\u2019huile d\u2019olive. Bien m\u00e9langer et p\u00e9trir jusqu\u2019\u00e0 ce que la p\u00e2te soit uniforme (il faut compter 5 minutes de p\u00e9trissage \u00e0 la main). Laisser reposer 30 minutes.<\/p>\n<p>Pr\u00e9parer la farce. Faire revenir \u00e0 la po\u00eale 5 minutes \u00e0 feu vif. Les mixer avec les p\u00e9tales de tomates s\u00e9ch\u00e9es. M\u00e9langer le tout \u00e0 la ricotta. Go\u00fbter, saler et poivrer.<\/p>\n<p>Faire des ronds dans la p\u00e2te \u00e0 ravioles. Mettre la farce d&rsquo;un c\u00f4t\u00e9 et plier la p\u00e2te en 2 pour faire des demi-lunes.<\/p>\n<p>Faire r\u00e9chauffer la cr\u00e8me avec le fond de volaille \u00e0 feu doux pour que le fond de volaille se lie bien \u00e0 la cr\u00e8me.<\/p>\n<p>Faire bouillir une grande casserole d&rsquo;eau sal\u00e9e. Plonger les raviolis dans la casserole. D\u00e8s que les raviolis remontent \u00e0 la surface, prolonger la cuisson 1 minute.
