Ne pas h\u00e9siter \u00e0 m\u00e9langer de temps en temps pour que le sucre caram\u00e9lise uniform\u00e9ment. Quand le sucre s\u2019est bien transform\u00e9 en caramel, ajouter le beurre sal\u00e9 et bien m\u00e9langer. Une fois le m\u00e9lange homog\u00e8ne ajouter la cr\u00e8me liquide. Il est possible qu\u2019\u00e0 cette \u00e9tape le caramel durcisse un peu au contact de la cr\u00e8me froide. Ce n\u2019est pas grave, il va fondre en r\u00e9chauffant. Faire chauffer ce m\u00e9lange jusqu\u2019\u00e0 ce qu\u2019il \u00e9paississe d\u2019une texture de cr\u00e8me anglaise.
