Faire revenir la viande dans de l&rsquo;huile pendant 3-4 minutes \u00e0 feu vif. Ajouter la marinade et faire cuire \u00e0 feu moyen pendant 1h \u00e0\u00a0couvert.<\/p>\n<p>Pendant ce temps, \u00e9plucher les patates. Les couper en 2. Les mettre dans la cocotte au bout d&rsquo;une heure et prolonger la cuisson une demi-heure.<\/p>\n<p>Enlever la viande et les pommes de terre. Augmenter le feu, d\u00e9couvrir et faire r\u00e9duire la sauce jusqu&rsquo;\u00e0 ce qu&rsquo;il y ait 3 c\u00e0s de jus. Ajouter la cr\u00e8me et les feuilles d&rsquo;estragon coup\u00e9es en 2. Remettre la viande et les pommes de terre et faire r\u00e9chauffer.<\/p>\n<p>Faire revenir les giroles dans de l&rsquo;huile d&rsquo;olive.
