R\u00e9cup\u00e9rer la graisse de canard qui est autour des cuisses.<\/p>\n<p>Eplucher la demi pomme et l&rsquo;oignon<\/p>\n<p>Couper l&rsquo;aubergine, la pomme et l&rsquo;oignon en petits\u00a0d\u00e9s.<\/p>\n<p>Faire fondre\u00a0un peu de graisse de canard\u00a0dans une po\u00eale. Quand elle est chaude, verser les aubergines et les pommes.\u00a0Saler l\u00e9g\u00e8rement et saler.\u00a0Les faire cuire une quinzaine de minutes.<\/p>\n<p>Dans une casserole, verser un peu d&rsquo;huile d&rsquo;olive et la faire chauffer. Verser les oignons et les faire revenir pendant 5 minutes. D\u00e9glacer \u00e0 l&rsquo;armagnac et prolonger la cuisson \u00e0 feu doux jusqu&rsquo;\u00e0 ce que les oignons soient compot\u00e9s. Les m\u00e9langer \u00e0 la pr\u00e9paration aux aubergines et r\u00e9server de c\u00f4t\u00e9.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0C.<\/p>\n<p>Dans chaque feuille de brick, verser sur le haut de la feuille un quart du canard et un quart de la pr\u00e9paration aux aubergines et aux oignons.
