Faire fondre le cube dans 1L d&rsquo;eau fr\u00e9missante.<\/p>\n<p>Dans une po\u00eale, faire chauffer un peu d&rsquo;huile d&rsquo;olive, y faire revenir les oignons pendant 2 minutes. Verser ensuite le riz et le faire revenir 2 minutes environ jusqu&rsquo;\u00e0 ce qu&rsquo;il soit translucide. Verser les 10cl de vin blanc.<\/p>\n<p>Remuer le riz avec une spatule en prenant soin de ne pas toujours tourner dans le m\u00eame sens. La r\u00e8gle est en g\u00e9n\u00e9ral de tourner 3 fois dans un sens puis une fois dans l&rsquo;autre et ainsi de suite.<\/p>\n<p>Quand le vin blanc est presque absorb\u00e9, ajouter un peu de bouillon et remuer jusqu&rsquo;\u00e0 ce que le liquide soit absorb\u00e9, et continuer \u00e0 en\u00a0verser progressivement jusqu&rsquo;\u00e0 ce que le riz soit al dente. Verser alors le parmesan et le brillat savarin. Bien m\u00e9langer. Faire fondre le fromage progressivement puis couper le feu.
