Le badigeonner du jus d&rsquo;un des citrons verts. Eplucher le second citron vert en coupant bien jusqu&rsquo;\u00e0 la chair. Couper ensuite les quartiers en ne conservant que la chair : les supr\u00eames. Couper ces derniers en petits d\u00e9s et les ajouter au saumon. Laisser reposer 1 heure au frais.<\/p>\n<p>Vers la fin du temps de repos, \u00e9plucher et couper la mangue,\u00a0 et les tomates. Ajouter de l&rsquo;huile de p\u00e9pins de raisin, du sel, du poivre et\u00a0 quelques gouttes de Tabasco. Le dosage du Tabasco d\u00e9pend des go\u00fbts de chacun (pour ma part, je mets une dizaine de gouttes). Ciseler la menthe en petits morceaux et l&rsquo;ajouter \u00e0 la pr\u00e9paration.<\/p>\n<p>Les verser\u00a0sur le\u00a0saumon\u00a0au bout d&rsquo;une heure, et faire reposer le tout 30 minutes au frais.
