Poursuivre l&rsquo;infusion du basilic pendant 10 minutes. Enlever les feuilles de basilic.<\/p>\n<p>Verser le m\u00e9lange dans les verrines. Laisser reposer 30 minutes.<\/p>\n<p>Couper les tomates confites en d\u00e9s. Verser l&rsquo;\u00e9quivalent d&rsquo;une tomate confite par panna cotta en les r\u00e9partissant dans la panna cotta de mani\u00e8re homog\u00e8ne. Mettre les verrines au frais pendant 1 nuit minimum.<\/p>\n<p>Le lendemain, couper la pancetta en d\u00e9s, et la faire revenir quelques secondes dans une po\u00eale bien chaude juste pour les faire griller. Les verser sur la panna cotta avant de servir. Ajouter une feuille de salade.<\/p>\n<p>Sur ma photo, les grains noirs sont du sel d&rsquo;Hawa\u00ef que j&rsquo;ai ajout\u00e9 pour la d\u00e9coration. Ce sel est plus croquant et donne la sensation d&rsquo;\u00eatre plus sal\u00e9 que le sel que nous connaissons.
