Couper le piment en petits d\u00e9s et enlever les grains.<\/p>\n<p>Faire chauffer 3 c\u00e0s d&rsquo;huile d&rsquo;olive dans une cocotte. Quand elle est bien chaude, y faire revenir les aubergines et le piment. Ajouter ensuite l&rsquo;ail et faire cuire une dizaine de minutes \u00e0 feu moyen, en veillant \u00e0 ce que les aubergines n&rsquo;accrochent pas.<\/p>\n<p>Eplucher et couper en petits d\u00e9s le gingembre. Les ajouter au bout de 10 minutes de cuisson aux aubergines et verser la sauce nuoc mam et le miel. Prolonger la cuisson jusqu&rsquo;\u00e0 ce que les aubergines soient cuites (15 minutes de plus environ).<\/p>\n<p>Laisser refroidir puis mettre au r\u00e9frig\u00e9rateur jusqu&rsquo;\u00e0 ce que le m\u00e9lange soit totalement froid.
