L&rsquo;\u00e9paisseur r\u00e9elle est au choix. Si vous souhaitez avoir des tranches tr\u00e8s fines pour faire un carpaccio, vous pouvez mettre le saumon 30 minutes au cong\u00e9lateur. Cela va l\u00e9g\u00e8rement le raffermir pour le couper plus facilement.<\/p>\n<p>Couper la menthe en lamelles, couper la mangue en lamelles comme sur la photo.<\/p>\n<p>Fouetter ensemble 2c\u00e0s d&rsquo;huile de p\u00e9pins de raisin, 1c\u00e0c d&rsquo;huile de noisette, le jus de citron, le sel et le poivre.<\/p>\n<p>Dans chaque assiette alterner des tranches de saumon et de mangue.
