Les couper en 4. Les faire revenir dans 25g de beurre. Saler un peu puis couvrir pour que les champignons perdent un peu d&rsquo;eau. Laisser revenir 5 minutes.<\/p>\n<p>Dans une casserole, faire fondre 50g de beurre, puis ajouter la farine. Bien remuer jusqu&rsquo;\u00e0 faire un roux. Puis ajouter le fond de volaille. Bien m\u00e9langer. Ajouter ensuite 1L d&rsquo;eau progressivement en fouettant bien pour que le roux se dilue bien. Ajouter ensuite les champignons et faire cuire 10 minutes. Mixer. Ajouter la cr\u00e8me et mixer de nouveau. Chauffer l\u00e9g\u00e8rement le velout\u00e9 puis servir dans les bols.
