Couper les patates en fines tranches, les pommes en d\u00e9s et les oignons en d\u00e9s.<\/p>\n<p>Couper le beurre en parcelles, le m\u00e9langer avec la farine, puis ajouter un jaune d\u2019\u0153uf et une pinc\u00e9e de sel. Ajouter un filet d&rsquo;eau et bien p\u00e9trir \u00e0 nouveau jusqu&rsquo;\u00e0 ce que la p\u00e2te soit homog\u00e8ne.<\/p>\n<p>Dans une casserole, faire revenir un peu d&rsquo;huile. Ajouter les oignons \u00e0 feu vif pendant 3 minutes, ajouter le vin blanc et laisser cuire \u00e0 feu moyen 5 minutes. Ajouter ensuite les pommes, un peu d&rsquo;herbes de Provence, un peu de sel et de poivre, couvrir et prolonger la cuisson 20 \u00e0 25 minutes jusqu&rsquo;\u00e0 ce que cela compote.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0C.<\/p>\n<p>Faire revenir les pommes de terre pendant 10 minutes dans une po\u00eale huil\u00e9e.<\/p>\n<p>Couper le boudin en tranches.<\/p>\n<p>\u00c9taler la p\u00e2te puis, la verser dans un plat \u00e0 tarte.<\/p>\n<p>Verser sur la p\u00e2te la compot\u00e9e d&rsquo;oignons rouges et de pommes. Puis d\u00e9poser par dessus le boudin et les pommes de terre en les alternant.<\/p>\n<p>Cuire la tarte 20 minutes \u00e0 180\u00b0C.
