Faire bouillir le vinaigre et le faire r\u00e9duire de moiti\u00e9. Ajouter 1c\u00e0s de sucre, m\u00e9langer et continuer la r\u00e9duction jusqu&rsquo;\u00e0 ce que le m\u00e9lange soit sirupeux.<\/p>\n<p>Faire chauffer le coulis de tomates \u00e0 feu doux, ajouter 1\/2 c\u00e0c de sucre pour adoucir le go\u00fbt, du poivre et un peu de sel. Faire bouillir et r\u00e9duire de moiti\u00e9 pour que le coulis devienne une pur\u00e9e de tomates.<\/p>\n<p>Sur les tranches de pain, d\u00e9poser la pur\u00e9e de tomates, puis les grandes tranches de chorizo, puis le gorgonzola coup\u00e9 en d\u00e9s, puis le gruy\u00e8re r\u00e2p\u00e9. Faire cuire le tout \u00e0 180\u00b0C 10 minutes environ. Sortir du four d\u00e8s que le gruy\u00e8re a bien fondu.<\/p>\n<p>Par dessus, d\u00e9poser une poign\u00e9e de roquette, 2 tomates cerise coup\u00e9es en fines tranches, 2 feuilles de basilic cisel\u00e9 et 1 feuille de basilic enti\u00e8re.<\/p>\n<p>Verser le sirop de balsamique dans une petite bouteille adapt\u00e9e permettant de reverser le balsamique en filet. A d\u00e9faut, verser le dans une poche \u00e0 douille jetable et couper la pointe au niveau le plus fin.
