Ajouter un peu d&rsquo;huile d&rsquo;olive, de sel et de poivre.<\/p>\n<p>Cuire le riz. Faire bouillir 55cl d&rsquo;eau sal\u00e9e. Ajouter le riz, couvrir, et porter \u00e0 \u00e9bullition. D\u00e8s que cela boue, sans ouvrir la casserole, baisser \u00e0 feu tr\u00e8s doux et laisser cuire 10 minutes. Faire reposer le riz sans le d\u00e9couvrir 10 minutes suppl\u00e9mentaires.<\/p>\n<p>Couper les carottes et les poireaux en deux dans le sens de la longueur.<\/p>\n<p>Couper en gros cubes 1 pav\u00e9 d&rsquo;espadon et un pav\u00e9 de thon. Saler et poivrer l\u00e9g\u00e8rement. Les r\u00e9server pour les cuire en mi-cuit au dernier moment.<\/p>\n<p>Couper le second pav\u00e9 d&rsquo;espadon et les 2 autres pav\u00e9s de thon en petits d\u00e9s. Les ajouter\u00a0aux autres ingr\u00e9dients d\u00e9j\u00e0 m\u00e9lang\u00e9s (citrons, tomate&#8230;).<\/p>\n<p>Pendant que le poisson cru marine, faire revenir les carottes et les poireaux 1 minute \u00e0 feu vif puis 4 minutes de chaque c\u00f4t\u00e9 \u00e0 feu moyen.<\/p>\n<p>Faire revenir 2 minutes maximum dans de l&rsquo;huile d&rsquo;olive les gros cubes r\u00e9serv\u00e9s de c\u00f4t\u00e9. Les m\u00e9langer au reste du poisson.
