Envelopper le thon de cette pr\u00e9paration. Le mettre dans un tupperware de la taille des pav\u00e9s de thon. Laisser mariner pendant 24 heures en vidant l&rsquo;eau du tupperware r\u00e9guli\u00e8rement (le thon va perdre de l&rsquo;eau). Une fois le temps pass\u00e9, bien rincer le thon pour qu&rsquo;il ne soit pas trop sal\u00e9. Couper le thon en lamelles.<\/p>\n<p>Faire les \u0153ufs poch\u00e9s :\u00a0http:\/\/www.papillonette.fr\/?p=569<\/p>\n<p>Dans chaque assiette, d\u00e9poser les lamelles de gravlax, un \u0153uf poche au milieu, puis d\u00e9poser dessus des d\u00e9s de scarmoza, des p\u00e9tales de tomates confites, de la ciboulette cisel\u00e9e, et enfin un peu d&rsquo;huile d&rsquo;olive.
