Les poser sur une plaque allant au four. Verser par dessus de l&rsquo;huile d&rsquo;olive, un peu de sel, du poivre, des feuilles de romarin et du basilic. Les cuire 2 heures \u00e0 100\u00b0C pour les confire.<\/p>\n<p>Couper les patates en 4 dans le sens de la longueur (comme des potatoes) sans les \u00e9plucher. Les mariner dans un peu d&rsquo;huile, du sel, du poivre et du paprika (environ 1c\u00e0c) pendant 1 heure.<\/p>\n<p>Enlever le boyau de la merguez. M\u00e9langer la viande hach\u00e9e avec l&rsquo;ail press\u00e9 et la chair de merguez. Farcir les coquelets. Placer les coquelets sur un plat allant au four. D\u00e9poser sur le coquelet, du sel, du poivre du paprika, de l&rsquo;huile d&rsquo;olive et des feuilles de romarin. Cuire 1h00 \u00e0 120\u00b0C. Arroser r\u00e9guli\u00e8rement. A basse temp\u00e9rature, le coquelet\u00a0sera onctueux\u00a0une fois cuit. Au bout de 55 minutes, monter le feu \u00e0 220\u00b0C pour que la peau grille (et les potatoes).<\/p>\n<p>Au bout de 20 minutes de cuisson des coquelets, ajouter les potatoes. Les cuire donc 40 min \u00e0 130\u00b0C On reste dans la logique de basse temp\u00e9rature ; ce qui n&rsquo;est pas g\u00eanant pour les potatoes, d&rsquo;autant que le fin de cuisson est \u00e0 haute temp\u00e9rature.<\/p>\n<p>R\u00e9chauffer les tomates 5 minutes \u00e0 100\u00b0C.
