Emincer\u00a0le poireau et l&rsquo;\u00e9chalote, saler l\u00e9g\u00e8rement et poivrer. Les faire revenir dans de l&rsquo;huile pendant 5 minutes puis ajouter la saucisse et les herbes de Provence, et prolonger la cuisson jusqu&rsquo;\u00e0 ce que la viande soit cuite.<\/p>\n<p>Cuire les pommes de terre \u00e0 l&rsquo;eau, les \u00e9plucher et les \u00e9craser en pur\u00e9e. Ajouter le beurre et fouetter.<\/p>\n<p>Tout m\u00e9langer.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0C.<\/p>\n<p>Prendre une feuille de brick. Poser 1\/8\u00e8me de la pr\u00e9paration sur la brick comme dans un nems. Plier les bords du c\u00f4t\u00e9 sur la pr\u00e9paration puis rouler comme un nem. Faire de m\u00eame avec les autres brick. Mettre du jaune d&rsquo;oeuf sur la jonction int\u00e9rieure de la brick, puis badigeonner le dessus des bricks.<\/p>\n<p>Cuire 15 minutes environ au four.
