M\u00e9langer, et laisser repose 5 minutes.<\/p>\n<p>Faire une p\u00e2te \u00e0 pizza. Verser la farine dans un saladier. Bien saler. Faire un puits au milieu. Verser progressivement l&rsquo;eau en m\u00e9langeant sans cesse. Le principe est d&rsquo;ajouter progressivement de la farine \u00e0 l&rsquo;eau. P\u00e9trir jusqu&rsquo;\u00e0 ce que la p\u00e2te soit lisse. Laisser reposer 2 heures. Refaire une poule en d\u00e9gazant la p\u00e2te, et faire de nouveau reposer 1 heure.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 250\u00b0C.<\/p>\n<p>Verser la coulis, le vin blanc et le sucre dans une casserole. Faire bouillir. R\u00e9duire le coulis par 3. Saler et poivrer.<\/p>\n<p>\u00c9taler la p\u00e2te bien fine.. D\u00e9poser le coulis r\u00e9duit sur la p\u00e2te, le jambon cru coup\u00e9 en d\u00e9s, le beaufort et la mozzarella coup\u00e9s en d\u00e9s, le persil plat et le gruy\u00e8re r\u00e2p\u00e9. Bien r\u00e9partir les ingr\u00e9dients.<\/p>\n<p>Cuire 5 minutes maximum \u00e0 250\u00b0C.
