Avec un couteau bien aiguis\u00e9 et de la concentration, c&rsquo;est relativement facile.<\/p>\n<p>R\u00e9server de c\u00f4t\u00e9 la carcasse et les ailes.<\/p>\n<p>D\u00e9poser entre la peau et la chair du basilic et l&rsquo;ail coup\u00e9 en lamelle. Les entourer de poitrine fum\u00e9e. Ne pas h\u00e9siter \u00e0 en mettre pas mal, car la poitrine fum\u00e9e va se r\u00e9tracter lors de la cuisson.<\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0C et mettre le tout \u00e0 cuire 45 minutes.<\/p>\n<p>Pendant ce temps, mettre la carcasse et les ailes dans une casserole avec les carottes, le poireau et l&rsquo;oignon coup\u00e9s. Saler l\u00e9g\u00e8rement couvrir et faire mijoter au moins une heure. Passer le jus au chinois, puis le remettre sur le feu et faire r\u00e9duire jusqu&rsquo;\u00e0 ce qu&rsquo;il reste environ 15cl (d&rsquo;o\u00f9 l&rsquo;int\u00e9r\u00eat de ne pas trop saler au d\u00e9part).
