Laisser reposer 30 minutes.<\/p>\n<p>Verser le vin dans une casserole et ajouter l\u2019oignon, l\u2019\u00e9chalote, l\u2019a\u00efl, un bouquet garni et un clou de girofle. Faire r\u00e9duire le vin jusqu\u2019\u00e0 ce qu\u2019il reste 1 louche environ. Ajouter le fond de veau,\u00a0laisser refroidir.<\/p>\n<p>Puis remettre sur le feu et monter la sauce au beurre.<\/p>\n<p>&nbsp;<\/p>\n<p>Po\u00ealer le saumon sans trop le cuire. L\u2019exc\u00e8s de cuisson est l\u2019ennemi du saumon.<\/p>\n<p>&nbsp;<\/p>\n<p>Pour la po\u00eal\u00e9e de girolles\u00a0:<\/p>\n<p>Ingr\u00e9dients\u00a0:<\/p>\n<p>&#8211; girolles (une vingtaine)<\/p>\n<p>&#8211; 2 \u00e9chalotes<\/p>\n<p>&#8211; huile d\u2019olive, sel et poivre, herbes de Provence<\/p>\n<p>&nbsp;<\/p>\n<p>Faire revenir des \u00e9chalotes cisel\u00e9es dans une po\u00eale avec de l\u2019huile d\u2019olive. Ajouter des girolles ainsi que des herbes de Provence, du sel et du poivre.
