Les \u00e9plucher une fois cuite, les mettre en pur\u00e9e. Ajouter la moiti\u00e9 d\u2019\u00e9chalote \u00e9minc\u00e9e + le lait + 1c\u00e0s de gruy\u00e8re. Bien m\u00e9langer.<\/p>\n<p><a href=\"http:\/\/www.papillonette.fr\/wp-content\/uploads\/2012\/06\/pur\u00e9e.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-thumbnail wp-image-883\" title=\"pur\u00e9e\" src=\"http:\/\/www.papillonette.fr\/wp-content\/uploads\/2012\/06\/pur\u00e9e-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a><\/p>\n<p>Une fois cuit, couper le canard en d\u00e9s, et faire r\u00e9duire le jus. Ce jus est compos\u00e9 de la r\u00e9duction du fond de volaille et du vin et de graisse de canard.<\/p>\n<p>Enfin, r\u00e9partir le canard dans 3 ou 4 cocottes, mettre la pur\u00e9e dessus. Mettre un peu de r\u00e9duction de jus (1.5 c\u00e0s par cocotte).
